Tuscan Bean Soup
1 medium onion, finely chopped
3 garlic cloves, crushed
4 carrots, sliced
2 cups white beans
1 cup green beans
3 medium potatoes, cubed
2 bay leaves
1 teaspoon salt, pepper, paprika
chopped parsley
6 - 8 cups water or broth
Saute onions & garlic. Add water, carrots, potatoes & herbs. Simmer until vegetables are tender. Add beans and simmer 5 more minutes.
4 - 6 servings
